Ingredients

Cucumber Water

  • 24 oz Water
  • 8 slices Cucumber
  • Ice cubes

Vegetable Hummus Wrap

  • 2 large Tortilla wraps whole wheat or preferred type
  • 1 cup Hummus
  • 1 cup Carrots shredded
  • 1 Cucumber thinly sliced
  • 1 Tomato sliced
  • 1 cup Arugula
  • Salt to taste
  • Black pepper to taste
  • 1 Avocado ripe, sliced
  • 6 slices Parmesan cheese from a wedge

Cheese and Crackers

  • 12 Crackers
  • 2 oz Your choice of cheese e.g., Cheddar or Brie

Mango

  • 1 Mango sliced

Instructions

  • Prep ingredients: Prepare all ingredients as listed.
  • Make cucumber water: Combine cucumber slices and water and let infuse in the refrigerator. Serve over ice if desired.
  • Assemble wraps: Lay tortilla wraps flat on a clean surface. Spread a generous amount of hummus on each wrap. Layer with carrots, cucumber slices, tomato slices, avocado, arugula, and Parmesan cheese. Season with salt and black pepper.
  • Roll and slice: Fold in the sides, roll up tightly, and slice each wrap in half.
  • Serve alongside cheese and crackers, mango, and cucumber water.
