Turkey Provolone Sandwich

Ingredients

For the Sandwiches

  • 2 TBSP Mayonnaise
  • 1 tsp Lime juice
  • 2 TBSP Fresh parsley chopped
  • 1/8 tsp Black pepper
  • 4 slices Sourdough bread toasted (optional)
  • 4 slices Provolone cheese
  • 6 oz Deli turkey breast
  • 1 cup Microgreens

For the Chia Fresca

  • 1/2 cup Lemon juice fresh squeezed
  • 16 oz Water
  • 2 TBSP Maple syrup or honey (your choice)
  • 1/2 tsp Chia seeds
  • pinch Salt
  • Fresh mint for garnish

For the Side

  • 1 cup Carrots peeled and cut into sticks (or use baby carrots)
  • 1/2 cup Hummus

Instructions

  • Prepare all ingredients as listed above.
  • In a small bowl, mix the mayonnaise, lime juice, parsley, and black pepper to create the lime-herb mayo. Set aside.
  • Spread the lime-herb mayo evenly on one side of each slice of toasted sourdough.
  • Layer two slices of bread with microgreens, deli turkey breast, and provolone cheese. Top with the remaining slices of bread, mayo side down. Gently press and cut each sandwich in half.
  • To make the chia fresca, stir together the lemon juice, water, maple syrup (or honey), chia seeds, salt, and mint. Let sit for 5 minutes to allow the chia seeds to bloom and thicken slightly.
  • Serve the sandwiches with carrot sticks and hummus, alongside chia fresca.
