Ingredients

Rooibos Iced Tea

  • 2 Rooibos tea bags
  • 2 cups Water
  • Honey or sugar, to taste
  • Ice cubes

Sandwich

  • 2 TBSP Mayonnaise
  • 1 tsp Lime juice
  • 2 TBSP Fresh parsley chopped
  • 4 slices Sourdough bread toasted, optional
  • 1 cup Microgreens
  • 4 slices Provolone cheese
  • 6 oz Deli turkey breast

Carrots and Hummus

  • 1 cup Carrots peeled and cut into sticks, or baby carrots
  • ½ cup Hummus

Instructions

  • Prep ingredients: Prepare all ingredients as listed. Peel and cut carrots if using whole carrots.
  • Make rooibos tea: Bring water to a boil. Steep rooibos tea bags for 5–7 minutes. Remove bags, sweeten to taste, and chill. Serve over ice.
  • Make lime-herb mayo: In a small bowl, mix mayonnaise, lime juice, and chopped parsley. Set aside.
  • Assemble sandwiches: Spread the lime-herb mayo evenly on one side of each slice of toasted sourdough. Layer with microgreens, turkey breast, and provolone cheese. Top with a second slice of bread, mayo side down, and gently press. Cut each sandwich in half.
  • Serve: Serve sandwiches with carrot sticks and hummus alongside the rooibos iced tea.
