Turkey Microgreens Sandwich

Ingredients

Sandwich

  • 2 TBSP Mayonnaise
  • 1 tsp Lime juice
  • 2 TBSP Fresh parsley chopped
  • 4 slices Sourdough bread toasted (optional)
  • 1 cup Microgreens
  • 6 oz Deli turkey breast
  • 1 Avocado sliced
  • 4 slices Provolone cheese

Carrots and Hummus

  • 1 cup Carrots peeled and cut into sticks or use baby carrots
  • 1/2 cup Hummus

Chia Fresca

  • 1/2 cup Lemon juice fresh squeezed
  • 16 oz Water
  • 2 TBSP Maple syrup or honey (your choice)
  • 1/2 tsp Chia seeds
  • pinch Salt
  • 2 sprigs Fresh mint for garnish

Instructions

  • Prepare all ingredients as listed above.
  • In a small bowl, mix the mayonnaise, lime juice, and parsley to make the lime-herb mayo. Set aside.
  • Spread the lime-herb mayo evenly on one side of each slice of toasted sourdough bread.
  • Layer the bread with microgreens, deli turkey breast, avcado, and provolone cheese.
  • Top each with a second slice of bread, mayo side down, and gently press. Cut each sandwich in half.
  • To prepare the chia fresca, combine all ingredients together. Stir well and let sit for 5 minutes to allow the chia seeds to bloom.
  • Serve the sandwich with carrot sticks, hummus, and chia fresca.
