Ingredients
Sandwich
- 2 TBSP Mayonnaise
- 1 tsp Lime juice
- 2 TBSP Fresh parsley chopped
- 4 slices Sourdough bread toasted (optional)
- 1 cup Microgreens
- 6 oz Deli turkey breast
- 1 Avocado sliced
- 4 slices Provolone cheese
Carrots and Hummus
- 1 cup Carrots peeled and cut into sticks or use baby carrots
- 1/2 cup Hummus
Chia Fresca
- 1/2 cup Lemon juice fresh squeezed
- 16 oz Water
- 2 TBSP Maple syrup or honey (your choice)
- 1/2 tsp Chia seeds
- pinch Salt
- 2 sprigs Fresh mint for garnish
Instructions
- Prepare all ingredients as listed above.
- In a small bowl, mix the mayonnaise, lime juice, and parsley to make the lime-herb mayo. Set aside.
- Spread the lime-herb mayo evenly on one side of each slice of toasted sourdough bread.
- Layer the bread with microgreens, deli turkey breast, avcado, and provolone cheese.
- Top each with a second slice of bread, mayo side down, and gently press. Cut each sandwich in half.
- To prepare the chia fresca, combine all ingredients together. Stir well and let sit for 5 minutes to allow the chia seeds to bloom.
- Serve the sandwich with carrot sticks, hummus, and chia fresca.
