Ingredients

Sloppy Joes

  • 1 tsp Extra-virgin olive oil
  • ½ cup Onion finely chopped
  • 1 clove Garlic minced
  • 8 oz Ground beef
  • Salt to taste
  • Black pepper to taste
  • 1 TBSP Tomato paste
  • ¼ cup Ketchup
  • 1 TBSP Mustard
  • 1 tsp Worcestershire sauce
  • 1 tsp Brown sugar
  • 2 Hamburger buns

Persian Cucumber Salad

  • 2 cups Cucumbers thinly sliced
  • ½ Avocado diced
  • 1 TBSP Fresh dill chopped
  • 1 TBSP Fresh mint chopped
  • 1 TBSP Extra-virgin olive oil
  • 1 TBSP Lemon juice
  • cup Walnuts chopped
  • 1/4 cup Feta cheese crumbled
  • Salt to taste
  • Black pepper to taste

Pineapple Orange Juice Spritzer

  • ½ cup Pineapple juice
  • ½ cup Orange juice
  • 1 cup Sparkling water
  • Ice cubes

Instructions

  • Prepare the Sloppy Joe Filling: Heat olive oil in a skillet over medium heat. Sauté the chopped onion for 2-3 minutes until softened. Add minced garlic and cook for 30 seconds until fragrant.
  • Add ground beef, season with salt and pepper, and cook until nicely browned.
  • Stir in tomato paste, ketchup, mustard, Worcestershire sauce, and brown sugar. Simmer for 5 minutes until the sauce thickens slightly.
  • Toast the Buns: While the filling simmers, toast the hamburger buns in a dry skillet or toaster until golden brown.
  • Make the Persian Cucumber Salad: In a bowl, combine all of the ingredients and mix until combined. Set aside.
  • Prepare the Pineapple Orange Juice Spritzer: In a pitcher, mix pineapple juice and orange juice. Add sparkling water and gently stir. Serve over ice cubes and garnish with an orange slice if desired.
  • Assemble and Serve: Spoon the sloppy joe mixture onto the toasted buns. Serve with the cucumber salad on the side and the spritzer.
