Sausage Pepperjack Omelet

Ingredients

Omelet

  • 1 tsp Butter
  • 1 cup Breakfast sausage links chopped
  • ½ cup Onion diced
  • ½ cup Bell pepper diced
  • 4 Eggs beaten
  • ½ cup Pepper jack cheese shredded
  • Salt
  • Black pepper

Fruit

  • 1 cup Mixed fruit (e.g. strawberries blueberries banana slices)

Orange Juice

  • 16 oz Orange juice cold

Instructions

  • Cook the Sausage: In a medium skillet over medium heat, add the butter and sausage. Cook until browned and cooked through. Add the onions and peppers sautéing until softened.
  • Pour the eggs into the skillet, swirling to coat the pan evenly. Cook for about 2 - 3 minutes, allowing the eggs to set. Lift the edge of the omelet and tilt the pan to allow uncooked egg to get underneath.
  • Once the eggs are mostly set, add the pepper jack cheese on one half of the omelet. Fold the other half over to cover the filling. Cook for another 1 - 2 minutes until the cheese is melted.
  • Serve the omelet with a side of fruit and orange juice.
