Ingredients
Cilantro Lime Mayo
- 1/4 cup Mayonnaise
- 1 TBSP Lime juice
- 1 TBSP Fresh cilantro chopped
Sandwich
- 8 oz Salmon skinless (check pin bones are removed)
- Salt
- Black pepper
- 1 TBSP Extra-virgin olive oil
- 2 Brioche buns
- 1 cup Shredded cabbage mix
- 2 slices Havarti dill cheese
- 1 Tomato sliced
- ¼ cup Fresh cilantro chopped
Sides
- 1 cup Carrots peeled and cut into sticks or use baby carrots
- 1/2 cup Hummus
Mango Lassi
- 1½ cups Frozen mango chopped
- ¾ cup Plain yogurt
- ¾ cup Milk
- ¼ tsp Ground cardamom
- 1 TBSP Sugar to taste
Instructions
- Prep the ingredients per the instructions above.
- Preheat the grill to medium heat.
- In a small bowl, mix mayonnaise, lime juice, and chopped cilantro.
- Season the salmon with salt and pepper. Grill on both sides to an internal temperature of 145F (61C).
- Toast the buns on the grill.
- Mango Lassi: Blend mango, yogurt, milk, cardamom, and sugar until smooth. Adjust sweetness to taste.
- Assemble sandwiches: spread cilantro lime mayo on both bun halves, then layer with cabbage, tomato slices, grilled salmon with havarti, and fresh cilantro.
- Serve with carrots, hummus, and mango lassi.
