Ingredients
For the Vinaigrette
- 1/2 TBSP Dijon mustard
- 1/2 clove Garlic minced
- 1/2 tsp Lemon juice
- pinch Salt
- 2 TBSP Extra-virgin olive oil
Sandwich
- 4 slices Miche bread or rustic style sourdough
- 1/4 cup Mayonnaise
- 2 cups Arugula
- 6 oz Salami
- 2 oz Crumbled blue cheese sliced or crumbled
- Black pepper to taste
- Extra-virgin olive oil for drizzling
- 2 oz Potato chips
- 2 Pickle spears
Homemade Lemonade
- 1/2 cup Lemon juice fresh squeezed
- 16 oz Water
- 2 TBSP Sugar use to taste
Instructions
- Prepare the Vinaigrette: In a small bowl, mix the Dijon mustard, minced garlic, lemon juice, salt, and freshly ground black pepper. Slowly whisk in the extra virgin olive oil until the vinaigrette reaches the consistency of thick cream. If the vinaigrette is too thick, add a few drops of water to thin it out.
- Toast the bread if preferred.
- Assemble the Sandwiches: Spread mayonnaise evenly over one side of each slice of bread. Scatter a handful of arugula over top, lightly drizzle the prepared vinaigrette over the arugula, being careful not to soak the bread.
- Add salami and blue cheese (sliced or crumbled). Season with black pepper and a light drizzle of extra-virgin olive oil. Top with the remaining slice of bread. Cut in half.
- Mix the ingredients for the lemonade.
- Serve the sandwich with chips and pickle, and homemade lemonade.
