Ingredients
Cucumber Water:
- 8 slices Cucumber
- 24 oz Water
- Ice cubes
Sandwich
- 1 TBSP Extra-virgin olive oil
- 1 cup Onion thinly sliced
- 1 Poblano pepper sliced
- 6 oz Pulled pork
- 2 slices Swiss cheese
- 4 TBSP BBQ sauce
- 2 Brioche buns
- Salt to taste
- Black pepper to taste
- 2 oz Potato chips
- 2 Pickle spears
Instructions
- Cucumber Water: Place the cucumber slices in the water and allow to infuse in the refrigerator until ready to serve. Serve over ice if desired.
- Sauté Onions and Poblano Peppers: Heat olive oil in a pan over medium heat. Add the sliced onion and poblano pepper. Sauté for about 5-7 minutes, until the vegetables are softened and slightly caramelized. Season with salt and pepper.
- Reheat Pulled Pork: heat the pulled pork along witht he bbq sauce in a separate pan until warmed through.
- Toast Brioche Buns: Toast the brioche buns in a separate pan or toaster until golden brown.
- Assemble Sandwiches: layer the swiss cheese, pulled pork and onions and peppers onto the bun.Place the top half of the brioche bun on the sandwich.
- Serve with potato chips, pickle spears, and cucumber water.
