Ingredients

Omelet

  • 1 TBSP Butter
  • ¼ cup Onion diced
  • ¼ cup Bell pepper diced any color
  • ¼ cup Mushrooms sliced
  • 4 Chicken sausage links sliced
  • 4 Eggs beaten
  • ½ cup Cheddar cheese shredded
  • 1 TBSP Butter or oil for cooking
  • Salt
  • Black pepper
  • 2 tsp Parmesan cheese grated

Fruit

  • 1 cup Mixed fresh fruit e.g. grapes melon strawberries prepared accordingly

Orange Juice

  • 16 oz Orange juice cold

Instructions

  • Cook vegetables and sausage: In a medium nonstick skillet, heat butter or oil over medium heat. Add onion and bell pepper and sauté for 2–3 minutes until softened. Add mushrooms and sliced sausage. Cook for another 4–5 minutes, stirring occasionally, until browned and cooked through.
  • Pour in the beaten eggs and swirl to coat the pan evenly. When nearly set, add the cheese and fold the omelet in half.
  • Serve the omelet topped with a sprinkle of grated Parmesan cheese, with fruit and orange juice.
