Ingredients
Mexican Beef Street Tacos
- 1 tsp Extra-virgin olive oil
- 4 Soft taco shells whole wheat
- 8 oz Ground beef
- 1 tsp Chili powder
- 1/2 tsp Ground cumin
- 1/2 tsp Garlic powder
- Salt to taste
- Black pepper to taste
- 1/4 cup Onion diced
- 1/4 cup Tomatoes diced
- 1/4 cup Monterey Jack cheese shredded
- 1/4 cup Romaine lettuce chopped
Chips and Guac
- 1 Avocado
- 2 tsp Fresh cilantro chopped
- 1 TBSP Lime juice
- 1/4 tsp Garlic powder
- Salt to taste
- Black pepper to taste
- 2 oz Tortilla chips
Sparkling Chia Fresca
- 1/2 cup Lemon juice
- 1 TBSP Maple syrup
- 1/2 tsp Chia seeds
- 16 oz Sparkling water
- 2 sprigs Fresh mint
Instructions
- Prep all ingredients according to the ingredient list.
- Season the ground beef with chili powder, ground cumin, garlic powder, salt, and black pepper.
- Heat oil in a skillet over medium heat. Saute the ground beef, breaking it into small pieces, until fully browned. Remove from heat.
- Warm the soft taco shells in a pan over medium heat until pliable on both sides.
- Fill each taco shell with beef. Top with diced onion, diced tomatoes, shredded Monterey Jack cheese, and lettuce.
- To make the guacamole, mash the avocados in a bowl until smooth. Add chopped cilantro, lime juice, garlic powder, salt, and black pepper. Stir until well combined.
- For the chia fresca, combine combine all the ingredients. Let sit 5 minutes until the chia seeds bloom and slightly thicken.
- Serve the tacos with tortilla chips and guacamole alongside sparkling chia fresca.
