Ingredients

Mediterranean Frittata

  • 1 TBSP Extra-virgin olive oil
  • ¼ cup Red onion diced
  • ¼ cup Bell pepper any color, diced
  • ¼ cup Cherry tomatoes halved
  • ¼ cup Kalamata olives pitted and chopped
  • ¼ tsp Dried oregano
  • Salt to taste
  • Black pepper to taste
  • 4 Eggs
  • ¼ cup Feta cheese crumbled

Sausage

  • 4 Breakfast sausage links

Orange Juice

  • 16 oz Orange juice cold

Instructions

  • Preheat the Oven: Preheat your oven to 375°F (190°C).
  • Sauté the Vegetables: Heat olive oil in a medium oven-safe skillet over medium heat. Add the diced red onion and bell pepper, cooking for 2–3 minutes until softened. Add the halved cherry tomatoes and chopped olives, cooking for another 1–2 minutes. Season with dried oregano, salt, and black pepper.
  • Prepare the Eggs: In a medium bowl, whisk the eggs until smooth. Stir in the crumbled feta cheese.
  • Combine and Cook the Frittata Base: Pour the whisked egg mixture evenly over the sautéed vegetables in the skillet. Cook over medium heat for 2–3 minutes, allowing the edges to set while the center remains slightly runny.
  • Bake the Frittata: Transfer the skillet to the preheated oven and bake for 8–10 minutes, or until the frittata is fully set and lightly golden on top.
  • Cook the Sausage: While the frittata is baking, cook the sausage links in a skillet over medium heat, turning occasionally until browned and fully cooked, about 5–8 minutes.
  • Serve: Remove the frittata from the oven and let it rest for 1 minute. Slice into wedges and serve alongside the sausage links. Pour the orange juice into glasses and enjoy your breakfast!
