Ingredients

Ginger Lemongrass Iced Tea

  • 24 oz Water
  • 4 bags Lemongrass ginger tea
  • Sugar to taste
  • Ice cubes

Maine Lobster Roll

  • 8 oz Cooked lobster meat chopped
  • 2 TBSP Mayonnaise
  • 1 TBSP Lemon juice
  • 1 TBSP Fresh chives chopped
  • Salt to taste
  • Black pepper to taste
  • 1 TBSP Butter melted
  • 4 Hot dog buns
  • 1 cup Romaine lettuce shredded (optional)
  • 2 oz Your choice of block cheese sliced
  • 4 oz Crackers

Instructions

  • Bring the water to a simmer then turn off the heat. Steep the tea bags in water for 10 minutes then refrigerate to cool.
  • In a bowl, combine the chopped lobster meat, mayonnaise, lemon juice, chives, salt, and black pepper. Mix well to coat the lobster meat evenly with the dressing.
  • Preheat a skillet or griddle over medium heat. Melt the butter in the pan.
  • Toast the buns on each side until they are golden brown on both sides.
  • Line each toasted bun with lettuce leaves (optional). Divide the lobster mixture equally between the buns, filling them generously.
  • Add sugar to the tea to taste and pour over ice.
  • Serve the lobster rolls with cheese and crackers and ginger Lemongrass Iced Tea.
