Ingredients
Ginger Lemongrass Iced Tea
- 24 oz Water
- 4 bags Lemongrass ginger tea
- Sugar to taste
- Ice cubes
Maine Lobster Roll
- 8 oz Cooked lobster meat chopped
- 2 TBSP Mayonnaise
- 1 TBSP Lemon juice
- 1 TBSP Fresh chives chopped
- Salt to taste
- Black pepper to taste
- 1 TBSP Butter melted
- 4 Hot dog buns
- 1 cup Romaine lettuce shredded (optional)
- 2 oz Your choice of block cheese sliced
- 4 oz Crackers
Instructions
- Bring the water to a simmer then turn off the heat. Steep the tea bags in water for 10 minutes then refrigerate to cool.
- In a bowl, combine the chopped lobster meat, mayonnaise, lemon juice, chives, salt, and black pepper. Mix well to coat the lobster meat evenly with the dressing.
- Preheat a skillet or griddle over medium heat. Melt the butter in the pan.
- Toast the buns on each side until they are golden brown on both sides.
- Line each toasted bun with lettuce leaves (optional). Divide the lobster mixture equally between the buns, filling them generously.
- Add sugar to the tea to taste and pour over ice.
- Serve the lobster rolls with cheese and crackers and ginger Lemongrass Iced Tea.
