Ingredients
Jambon Beurre
- 1 1/2 TBSP Butter softened
- 1 TBSP Fresh chives minced
- 1 TBSP Fresh parsley minced
- ½ tsp Dijon mustard
- 1 clove Garlic grated
- Salt to taste
- Black pepper to taste
- 1 cup Arugula
- ½ TBSP Lemon juice
- 1.5 oz Brie cheese sliced
- 2 Whole wheat rolls
- 6 oz Deli ham low sodium
Carrots and Hummus
- 1 cup Carrots peeled and cut into sticks or baby carrots
- 1/3 cup Hummus
Mandarins
- 2 Mandarin oranges peeled and separated into segments
Lemon Sparkling Water + Chia Seeds
- 24 oz Sparkling water cold
- 1 Lemon sliced
- 2 tsp Chia seeds
Instructions
- Prepare all ingredients as listed. Remove the Brie from the refrigerator and allow it to sit briefly to soften slightly.
- In a bowl, combine the butter, chives, parsley, Dijon mustard, and garlic. Mix until smooth and well combined. Season with salt and black pepper.
- In a bowl, toss the arugula with lemon juice, salt, and black pepper until lightly coated.
- Slice the rolls and spread the herb butter evenly inside. Layer with deli ham, Brie, and dressed arugula..
- Combine the sparkling water, lemon slices, and chia seeds. Stir well and allow the chia seeds to hydrate briefly.
- Serve the sandwich with carrots, hummus, mandarins, and lemon chia sparkling water.
