Ingredients

Huevos Rancheros

  • 4 oz Ground chorizo sausage crumbled
  • ½ cup Black beans canned, drained and rinsed
  • 4 Corn tortillas
  • 2 tsp Butter
  • 4 Eggs
  • ½ cup Salsa
  • 1 Avocado sliced
  • 1 TBSP Fresh cilantro for garnish
  • ¼ cup White cheddar shredded
  • Salt to taste
  • Black pepper to taste

Orange Juice

  • 16 oz Orange juice cold

Instructions

  • Prep Ingredients: Gather all ingredients. Drain and rinse black beans. Slice the avocado if using.
  • Cook the Chorizo: In a medium skillet over medium heat, add the crumbled chorizo. Cook for about 5 - 7 minutes, stirring occasionally until fully cooked and slightly crispy. Remove chorizo from the skillet and set aside, leaving any drippings in the pan.
  • Heat the Tortillas: In the same skillet, add the corn tortillas one at a time, warming for about 30 seconds on each side until pliable. Remove and place on plates.
  • Cook the Eggs: Melt the butter in a nonstick pan over medium heat. Add the eggs into the skillet (sunny side up, over easy or scrambled, depending on preference). Cook to your desired doneness.
  • Assemble Huevos Rancheros: On each tortilla, layer the warmed black beans, cooked chorizo, and cooked eggs. Top with salsa, avocado slices, and sprinkle with cheese and fresh cilantro.
  • Serve: Serve the huevos rancheros warm with the orange juice on the side.
