Ingredients
Sandwich
- 1 TBSP Extra-virgin olive oil
- ½ cup Onion thinly sliced
- ½ cup Mushrooms sliced
- 6 oz Deli roast beef
- 2 slices Provolone cheese
- 2 Brioche buns
- 2 TBSP Herb mayo
Sides
- 1 cup Carrots peeled and cut into sticks (or use baby carrots)
- ½ cup Hummus
- 2 pickle spears
For the Sparkling Chia Fresca
- ½ cup Lemon juice Fresh squeezed
- 16 oz Sparkling water
- 2 TBSP Maple syrup or honey (your choice)
- ½ tsp Chia seeds
- pinch Salt
- Fresh mint leaves for garnish
Instructions
- Preheat the oven broiler.
- Heat olive oil in a pan over medium heat. Sauté the sliced onion and mushrooms until golden brown and tender, about 5 minutes. Set aside.
- Add the roast beef to the same pan and sauté until heated through and lightly browned, about 3–4 minutes.
- Place provolone cheese over the roast beef. Transfer the pan (or an oven-safe dish) to the broiler for 1–2 minutes, or until the cheese is melted and bubbly.
- Toast the brioche buns in a toaster or under the broiler until golden brown.
- Spread herb mayo inside each toasted brioche bun.
- Assemble the Sandwich: Layer the roast beef with melted provolone, then top with sautéed onions and mushrooms. Close with the top half of the bun.
- To make the chia fresca, combine all the ingredients. Let sit for 5 minutes for the chia to bloom.
- Serve the sandwiches with carrot sticks, hummus, pickle, and sparkling chia fresca.
