Ingredients

Hot Honey Mustard Sauce

  • ½ tsp Garlic powder
  • ½ tsp Onion powder
  • ¼ tsp Cayenne pepper
  • ½ tsp Salt
  • ¼ tsp Black pepper
  • 3 TBSP Honey
  • 2 TBSP Yellow mustard

Sandwich

  • 8 oz Boneless chicken thighs
  • 1 cup Pickle slices
  • 2 Sub rolls

Sides

  • 1 cup Carrots peeled and cut into sticks or use baby carrots
  • ½ cup Hummus

Mango Lassi

  • 1 cup Mango frozen and chopped
  • 1/4 cup Yogurt plain
  • 3 cups Milk
  • ¼ tsp Ground cardamom
  • 1 TBSP Sugar to taste

Instructions

  • Prepare all ingredients as listed above.
  • In a bowl, combine garlic powder, onion powder, cayenne pepper, salt, black pepper, honey, and yellow mustard to create the hot honey mustard sauce. Reserve half of the sauce for serving.
  • Preheat the air fryer or oven to 400°F (204°C).
  • Toss the chicken thighs with the sauce until evenly coated.
  • Place the chicken in the air fryer basket or on a baking sheet and cook at 400°F (204°C) for 12–15 minutes, or until golden to an internal temperature of 165°F (74°C). Then slice.
  • While the chicken cooks, slice the sub rolls in half and lightly toast in a toaster oven until golden.
  • Assemble the sandwiches: layer the chicken on the bottom halves of the rolls, drizzle with reserved sauce, and top with pickle slices (optional). Add the top halves of the rolls and gently press down. Cut in half for serving.
  • Make the mango lassi: In a blender, combine mango, yogurt, milk, cardamom, and sugar. Blend until smooth and creamy. Taste and adjust sweetness as desired.
  • Serve the sandwiches with the prepared carrots and hummus, alongside a glass of mango lassi.
