Ingredients

Ham Poblano Gouda Wrap

  • 1 tsp Extra-virgin olive oil
  • ½ cup Poblano pepper diced
  • ½ cup Deli ham diced
  • 1 cup Baby spinach fresh
  • 4 Eggs
  • 2 TBSP Milk
  • Salt to taste
  • Black pepper to taste
  • ½ cup Smoked gouda cheese shredded
  • 2 Whole wheat tortilla burrito size

Kimchi

  • 1 cup Kimchi

Blood Orange and Blackberries + Chia Seeds

  • 1 Blood orange peeled and sliced
  • 1 cup Blackberries
  • 1 tsp Chia seeds

Coffee

  • Coffee prepared using preferred method
  • Sweetener optional
  • Creamer optional

Instructions

  • Prepare all ingredients as listed.
  • Heat butter in a nonstick skillet over medium heat. Add the diced poblano pepper and cook until softened. Add the diced ham and cook until lightly browned. Add the fresh spinach and cook just until wilted.
  • In a bowl, whisk the eggs with milk, salt, and black pepper. Pour the egg mixture into the skillet and cook, stirring gently, until mostly set but still soft.
  • Sprinkle the shredded smoked Gouda over the eggs and continue cooking gently until the cheese is melted and the eggs are fully cooked. Remove from heat.
  • Warm the whole wheat wraps in a dry skillet or microwave until pliable.
  • Portion the egg mixture onto the wraps. Fold in the sides and roll up tightly. Cut in half if desired.
  • Place the kimchi into a serving bowl.
  • Combine the blood orange slices and blackberries in a small bowl and sprinkle with chia seeds.
  • Brew the coffee using your preferred method and add sweetener or creamer if desired.
  • Serve the wraps with kimchi, the fruit with chia seeds, and coffee.
