Ingredients
Scrambled Eggs with Smoked Gouda, Ham, and Poblano Pepper on Sprouted Grain Wrap
- 1 cup Poblano pepper finely diced
- 4 oz Smoked ham diced
- 4 Eggs beaten
- 1 tsp Butter or Extra-virgin olive oil
- ½ cup Smoked Gouda cheese shredded
- ¼ tsp Salt
- ¼ tsp Black pepper
- 2 Sprouted grain wraps 8–10 inch (e.g. Ezekiel brand)
Fruit
- 1 cup Mixed fresh fruit such as strawberries blueberries or banana slices
Strawberry Milk
- 2 TBSP Chia seeds
- 1/4 cup Water
- 2 cups Almond milk
- 2 cups Strawberries frozen
- 2 TBSP Honey or agave, adjust to taste
Instructions
- Prep the Ingredients: Dice the poblano pepper and ham. Crack and beat the eggs. Wash and prepare the fresh fruit. Set aside.
- Hydrate the Chia Seeds: Stir chia seeds into the water and let sit for 10–15 minutes to bloom. Add bloomed chia-water mixture, milk, frozen strawberries, and honey or agave to a blender. Blend on high until smooth and creamy. Adjust sweetness if needed. Pour into two glasses.
- Sauté the Poblano and Ham: In a non-stick skillet, heat olive oil or butter over medium heat. Add poblano pepper and sauté for 2–3 minutes until softened. Add diced ham and cook for 1–2 minutes until lightly browned.
- Scramble the Eggs: Pour in the beaten eggs. Stir gently with a spatula, cooking until eggs are mostly set but still slightly soft, about 2–3 minutes. Season with salt and pepper.
- Melt the Cheese: Sprinkle smoked Gouda over the eggs and stir for 1 minute until melted and eggs are fully cooked but still creamy. Remove from heat.
- Warm the Wraps: Heat wraps in a dry skillet for 20 seconds per side or microwave for 10–15 seconds until pliable.
- Assemble the Wraps: Portion the egg mixture onto the wrap. Fold in sides and roll up tightly. Cut in half.
- Serve: Plate each wrap with a side of mixed fruit and a glass of strawberry milk. Enjoy!
