Ingredients

Hibiscus Iced Tea

  • 4 cups Water
  • 2 Hibiscus tea bags (or 2 tsp loose hibiscus tea)
  • 2 TBSP Honey or sugar (adjust to taste)
  • Ice cubes

Sandwich

  • 4 slices Sourdough bread
  • 2 TBSP Mayonnaise
  • 4 leaves Romaine lettuce
  • 4 slices Tomato
  • 6 oz Deli ham
  • 4 slices Swiss cheese
  • 2 Pickle spears

Carrots and Hummus

  • 1 cup Carrots peeled and cut into sticks (or use baby carrots)
  • ½ cup Hummus

Instructions

  • Make the tea: Bring the water to a simmer, then remove from heat. Add the hibiscus tea bags (or loose tea) and steep for 10 minutes. Sweeten with honey or sugar to taste, then refrigerate until cool. Serve over ice.
  • Prepare the sandwich: Optionally toast the sourdough bread to your liking.
  • Spread mayonnaise on one side of each slice of bread.
  • Layer each sandwich with romaine lettuce, tomato slices, deli ham, and Swiss cheese.
  • Top with the remaining slices of bread, mayonnaise side down. Press gently and cut each sandwich in half.
  • Serve the sandwich with carrots, hummus, pickle spears and hibiscus iced tea.
