Ingredients
Greek Meatballs
- 4 oz Ground beef
- 4 oz Ground lamb
- 1/4 cup Breadcrumbs
- 2 TBSP Red onion finely chopped
- 1 clove Garlic minced
- 1/2 Egg beaten
- 1/2 tsp Dried oregano
- 1/2 tsp Ground cumin
- Salt to taste
- Black pepper to taste
- 1 TBSP Extra-virgin olive oil for cooking
- Ketchup for serving
Arakas Latheros
- 2 tsp Extra-virgin olive oil
- 1/2 cup Onion diced
- 2 cups Green peas
- 1/2 cup Water
- 1 TBSP Tomato paste
- 1/2 TBSP Fresh dill chopped
- Salt to taste
- Black pepper to taste
Tomato, Avocado, Feta, and Olives
- 1 Tomato sliced
- 1 Avocado sliced
- 2 tsp Extra-virgin olive oil
- 1/2 clove Garlic minced
- 1/2 tsp Dried oregano
- Salt to taste
- ½ block Feta cheese
- 1 cup Greek olives
Almond Milk with Cinnamon and Honey
- 16 oz Almond milk chilled
- 1/2 tsp Ground cinnamon
- 1 TBSP Honey
Instructions
- Prepare the ingredients as instructed above.
- Preheat oven to 375°F (190°C).
- In a bowl, combine ground beef, ground lamb, breadcrumbs, red onion, garlic, beaten egg, oregano, cumin, salt, and pepper. Mix well. Shape into 1-inch meatballs.
- Heat olive oil in a skillet over medium heat. Brown meatballs on all sides. Transfer to the oven and cook for 10–12 minutes, until the internal temperature reaches 160°F (71°C).
- Arakas Latheros: Heat olive oil in a medium pot over medium heat. Sauté onion until soft. Add green peas and stir to coat with oil. Stir in water and tomato paste. Bring to a simmer, cover with a lid, and cook until most of the water evaporates. Remove from heat and stir in dill. Season with salt and black pepper.
- Tomato, Avocado, Feta, and Olives: Portion tomato and avocado slices. Drizzle with olive oil, sprinkle with garlic, oregano, and feta, and add a pinch of salt.
- Almond Milk with Cinnamon and Honey: Stir together almond milk, cinnamon, and honey until well combined.
- Serve meatballs with ketchup, arakas latheros, tomato and avocado, Greek olives, and almond milk.
