Ingredients

Greek Meatballs

  • 4 oz Ground beef
  • 4 oz Ground lamb
  • 1/4 cup Breadcrumbs
  • 2 TBSP Red onion finely chopped
  • 1 clove Garlic minced
  • 1/2 Egg beaten
  • 1/2 tsp Dried oregano
  • 1/2 tsp Ground cumin
  • Salt to taste
  • Black pepper to taste
  • 1 TBSP Extra-virgin olive oil for cooking
  • Ketchup for serving

Arakas Latheros

  • 2 tsp Extra-virgin olive oil
  • 1/2 cup Onion diced
  • 2 cups Green peas
  • 1/2 cup Water
  • 1 TBSP Tomato paste
  • 1/2 TBSP Fresh dill chopped
  • Salt to taste
  • Black pepper to taste

Tomato, Avocado, Feta, and Olives

  • 1 Tomato sliced
  • 1 Avocado sliced
  • 2 tsp Extra-virgin olive oil
  • 1/2 clove Garlic minced
  • 1/2 tsp Dried oregano
  • Salt to taste
  • ½ block Feta cheese
  • 1 cup Greek olives

Almond Milk with Cinnamon and Honey

  • 16 oz Almond milk chilled
  • 1/2 tsp Ground cinnamon
  • 1 TBSP Honey

Instructions

  • Prepare the ingredients as instructed above.
  • Preheat oven to 375°F (190°C).
  • In a bowl, combine ground beef, ground lamb, breadcrumbs, red onion, garlic, beaten egg, oregano, cumin, salt, and pepper. Mix well. Shape into 1-inch meatballs.
  • Heat olive oil in a skillet over medium heat. Brown meatballs on all sides. Transfer to the oven and cook for 10–12 minutes, until the internal temperature reaches 160°F (71°C).
  • Arakas Latheros: Heat olive oil in a medium pot over medium heat. Sauté onion until soft. Add green peas and stir to coat with oil. Stir in water and tomato paste. Bring to a simmer, cover with a lid, and cook until most of the water evaporates. Remove from heat and stir in dill. Season with salt and black pepper.
  • Tomato, Avocado, Feta, and Olives: Portion tomato and avocado slices. Drizzle with olive oil, sprinkle with garlic, oregano, and feta, and add a pinch of salt.
  • Almond Milk with Cinnamon and Honey: Stir together almond milk, cinnamon, and honey until well combined.
  • Serve meatballs with ketchup, arakas latheros, tomato and avocado, Greek olives, and almond milk.
