Ingredients
Marinade & Seasoning
- 1/4 tsp Garlic powder
- 1/4 tsp Dried oregano
- 1 TBSP Lemon juice
- 1 TBSP Extra-virgin olive oil
- Salt to taste
- Black pepper to taste
Sandwich
- 8 oz Chicken breast boneless skinless butterflied
- 2 Brioche buns
- 1 TBSP Mayonnaise
- 2 cups Butter lettuce
- 4 slices Tomato
- 2 slices Swiss cheese
- 1/4 cup Red onion thinly sliced
Carrots and Hummus
- 1 cup Carrots peeled and cut into sticks
- 1/3 cup Hummus
Blueberries
- 1 cup Fresh blueberries
Lemon Chia Sparkling Water
- 24 oz Sparkling water cold
- 1 Lemon sliced
- 2 tsp Chia seeds
Instructions
- Prepare all ingredients as listed.
- In a bowl, whisk together garlic powder, dried oregano, lemon juice, and olive oil. Season with salt and black pepper.
- Add the chicken breast to the marinade and coat evenly on all sides.
- Preheat a grill or griddle pan over medium heat.
- Grill the chicken until fully cooked, reaching an internal temperature of 165°F (74°C). Remove from heat and allow to rest briefly.
- Lightly grill or toast the brioche buns until golden.
- Spread mayonnaise on the inside of each bun. Layer with butter lettuce, tomato, grilled chicken, Swiss cheese, and red onion.
- In a glass or pitcher, combine sparkling water, lemon slices, and chia seeds. Stir thoroughly, let rest briefly, then stir again to prevent clumping.
- Serve the Greek grilled chicken sandwich with carrots and hummus, blueberries, and the lemon chia sparkling water.
