Ingredients
Marinade
- ¾ tsp Garlic powder
- ¾ tsp Dried oregano
- 1 TBSP Lemon juice
- 3 TBSP Extra-virgin olive oil
Seasoning
- Salt to taste
- Black pepper to taste
Sandwich
- 8 oz Chicken breast boneless skinless butterflied
- 2 Brioche buns
- 2 TBSP Mayonnaise
- 2 cups Butter lettuce
- 4 slices Tomato
- 2 slices Swiss cheese
- ¼ cup Red onion sliced thin
Sides
- 1 cup Carrots peeled and cut into sticks or use baby carrots
- 1/2 cup Hummus
- 1 cup Fresh blueberries
Chia Fresca
- ½ cup Lemon juice Fresh squeezed
- 16 oz Sparkling water
- 2 TBSP Maple syrup or honey, (your choice)
- ½ tsp Chia seeds
- pinch Salt
- 2 sprigs Fresh mint for garnish
Instructions
- Prep the ingredients per the instructions above.
- In a bowl, whisk together the garlic powder, dried oregano, lemon juice, and olive oil to make the marinade. Season with salt and pepper to taste. Adjust until the marinade tastes well balanced.
- Place the chicken in the marinade to coat well.
- Preheat a grill or griddle pan over medium heat.
- Grill the chicken on both sides to an internal temperature of 165°F (74°C). Remove and let rest for 5 minutes.
- Lightly grill or toast the buns until golden brown, then set aside.
- Assemble the sandwich by spreading mayonnaise on the inside of each bun. Layer with butter lettuce, tomato, grilled chicken, Swiss cheese, and red onion.
- To make the chia fresca, combine all ingredients together. Let sit 5 minutes for the chia to bloom.
- Serve the grilled chicken sandwich with carrot sticks and hummus, blueberries, and sparkling fresca.
