Ingredients

Marinade

  • ¾ tsp Garlic powder
  • ¾ tsp Dried oregano
  • 1 TBSP Lemon juice
  • 3 TBSP Extra-virgin olive oil

Seasoning

  • Salt to taste
  • Black pepper to taste

Sandwich

  • 8 oz Chicken breast boneless skinless butterflied
  • 2 Brioche buns
  • 2 TBSP Mayonnaise
  • 2 cups Butter lettuce
  • 4 slices Tomato
  • 2 slices Swiss cheese
  • ¼ cup Red onion sliced thin

Sides

  • 1 cup Carrots peeled and cut into sticks or use baby carrots
  • 1/2 cup Hummus
  • 1 cup Fresh blueberries

Chia Fresca

  • ½ cup Lemon juice Fresh squeezed
  • 16 oz Sparkling water
  • 2 TBSP Maple syrup or honey, (your choice)
  • ½ tsp Chia seeds
  • pinch Salt
  • 2 sprigs Fresh mint for garnish

Instructions

  • Prep the ingredients per the instructions above.
  • In a bowl, whisk together the garlic powder, dried oregano, lemon juice, and olive oil to make the marinade. Season with salt and pepper to taste. Adjust until the marinade tastes well balanced.
  • Place the chicken in the marinade to coat well.
  • Preheat a grill or griddle pan over medium heat.
  • Grill the chicken on both sides to an internal temperature of 165°F (74°C). Remove and let rest for 5 minutes.
  • Lightly grill or toast the buns until golden brown, then set aside.
  • Assemble the sandwich by spreading mayonnaise on the inside of each bun. Layer with butter lettuce, tomato, grilled chicken, Swiss cheese, and red onion.
  • To make the chia fresca, combine all ingredients together. Let sit 5 minutes for the chia to bloom.
  • Serve the grilled chicken sandwich with carrot sticks and hummus, blueberries, and sparkling fresca.
