Ingredients

Frontega Chicken Panini

  • 1/4 cup Mayonnaise
  • 1/4 cup Chipotle chile in adobo finely chopped, plus adobo sauce to taste
  • 1/4 tsp Kosher salt
  • 1/8 tsp Black pepper
  • 1 1/2 cups Rotisserie chicken shredded
  • 2 pieces Focaccia bread halved horizontally (about 4”x4”)
  • 1/4 cup Fresh basil
  • 4 oz Mozzarella cheese sliced 1/4" thick
  • 1 Tomato sliced 1/4" thick
  • 1/2 Red onion thinly sliced
  • 1 tsp Extra-virgin olive oil

Sides

  • 1 cup Carrots peeled and cut into sticks or use baby carrots
  • 1/2 cup Hummus
  • 2 Pickle spears

Sparkling Chia Fresca

  • ½ cup Lemon juice Fresh squeezed
  • 2 TBSP Maple syrup or honey
  • ½ tsp Chia seeds
  • pinch Salt
  • 16 oz Sparkling water
  • Fresh mint leaves for garnish

Instructions

  • In a small bowl, stir together the mayonnaise, chipotle, adobo sauce, salt, and pepper.
  • Place the shredded chicken in a medium heatproof bowl. Cover and microwave in 15-second increments, stirring between each, until warmed through (about 1 minute).
  • Place the bottom halves of the focaccia on a clean surface. Spread the chipotle mayo on each slice, then layer with fresh basil. Add the warmed chicken on top, seasoning with pepper. Layer mozzarella and tomato over the chicken, and generously season with salt and pepper. Top with thinly sliced red onion. Spread the remaining chipotle mayo on the top halves of the focaccia, then close the sandwiches.
  • Heat a panini press or a large heavy pan over medium heat. Brush with olive oil. Working in batches if necessary, add the sandwiches to the panini press or pan; close the press or top the sandwich with another heavy pan. Cook the sandwiches until the focaccia is crisp and golden brown on both sides and the mozzarella is melted, about 3–4 minutes. If toasting in a pan, cook until golden brown on the bottom (about 2–3 minutes), then remove the top pan, flip the sandwiches, and continue to cook until golden brown on top and mozzarella is melted, about 1–2 minutes more.
  • To make the sparkling chia fresca, combine fresh squeezed lemon juice with maple syrup or honey in a medium pitcher. Stir until well mixed.
  • Add chia seeds and a pinch of salt to the lemon mixture. Slowly pour in sparkling water and gently stir to combine.
  • Pour the chia fresca into glasses and garnish each with a sprig of fresh mint.
  • Serve the frontega chicken panini with carrot sticks and hummus, pickle spears, and chilled chia fresca on the side.
