Ingredients

Cottage Cheese Toast With Tomato and Onion

  • 2 slices Your choice of bread
  • 1/2 cup Cottage cheese
  • 1 small Tomato diced
  • 2 TBSP Red onion chopped
  • 1/2 tsp Extra virgin olive oil
  • 1/4 tsp Dried oregano
  • Salt to taste
  • Black pepper to taste

Cottage Cheese Toast With Lox

  • 2 slices Your choice of bread
  • 1/2 cup Cottage cheese
  • 2 oz Lox (smoked salmon) chopped
  • 2 TBSP Red onion chopped
  • 1 tsp Fresh dill roughly chopped
  • Salt to taste
  • Black pepper to taste

Fruit

  • 2 cups Fresh fruit such as sliced apples, berries, or pineapple chunks, washed and prepared as needed

Orange Juice

  • 16 oz Orange juice cold

Instructions

  • Prepare all ingredients as listed.
  • Toast bread until golden brown.
  • Tomato and onion toast: Spread cottage cheese on toast. Top with tomato and red onion. Drizzle with olive oil and season with salt, black pepper, and oregano.
  • Lox toast: Spread cottage cheese on toast. Top with chopped lox, red onion, and dill. Season with salt and black pepper.
  • Serve both toast variations with fruit and orange juice.
