Cottage Cheese Toast With Tomato and Onion
- 2 slices Your choice of bread
- 1/2 cup Cottage cheese
- 1 small Tomato diced
- 2 TBSP Red onion chopped
- 1/2 tsp Extra virgin olive oil
- 1/4 tsp Dried oregano
- Salt to taste
- Black pepper to taste
Cottage Cheese Toast With Lox
- 2 slices Your choice of bread
- 1/2 cup Cottage cheese
- 2 oz Lox (smoked salmon) chopped
- 2 TBSP Red onion chopped
- 1 tsp Fresh dill roughly chopped
- Salt to taste
- Black pepper to taste
Fruit
- 2 cups Fresh fruit such as sliced apples, berries, or pineapple chunks, washed and prepared as needed
Orange Juice
- 16 oz Orange juice cold
Instructions
- Prepare all ingredients as listed.
- Toast bread until golden brown.
- Tomato and onion toast: Spread cottage cheese on toast. Top with tomato and red onion. Drizzle with olive oil and season with salt, black pepper, and oregano.
- Lox toast: Spread cottage cheese on toast. Top with chopped lox, red onion, and dill. Season with salt and black pepper.
- Serve both toast variations with fruit and orange juice.
