Cottage Cheese Toast – Tomato and Onion
- 2 slices Your choice of bread
- ½ cup Cottage cheese
- 1 Tomato small diced
- 2 TBSP Red onion chopped
- ½ tsp Extra virgin olive oil
- ¼ tsp Dried oregano
- Salt to taste
- Black pepper to taste
Cottage Cheese Toast – Lox
- 2 slices Your choice of bread
- ½ cup Cottage cheese
- 2 oz Lox smoked salmon chopped
- 2 TBSP Red onion chopped
- 1 tsp Fresh dill roughly chopped
- Salt to taste
- Black pepper to taste
Mango
- 1 cup Mango peeled and sliced or diced
Orange Juice
- 16 oz Orange juice cold
Instructions
- Prepare all ingredients as described above.
- Toast all slices of bread until golden brown.
- Tomato and Onion Toast: Spread cottage cheese evenly on toasted bread. Top with diced tomato and red onion. Drizzle with olive oil, then season with salt, black pepper, and oregano.
- Lox Toast: Spread cottage cheese evenly on toasted bread. Top with chopped lox, red onion, and fresh dill. Season with salt and black pepper.
- Prepare sides: Wash and cut the mango as needed. Pour cold orange juice into glasses.
- Serve: Arrange both varieties of cottage cheese toast on plates with mango and orange juice. Enjoy your breakfast.
