Ingredients

Cottage Cheese Toast with Tomato and Onion

  • 2 slices Your choice of bread
  • ½ cup Cottage cheese
  • 2 TBSP Red onion chopped
  • 1 Tomato small diced
  • ½ tsp Extra-virgin olive oil
  • ¼ tsp Dried oregano

Cottage Cheese Toast with Lox

  • 2 slices Your choice of bread
  • ½ cup Cottage cheese
  • 2 oz Lox (smoked salmon) chopped
  • 2 TBSP Red onion chopped
  • 1 tsp Fresh dill roughly chopped

Seasoning

  • Salt to taste
  • Black pepper to taste

Fruit

  • 2 cups Mixed fruit (e.g. apple slices, grapes, kiwi), washed and prepared as needed

Orange Juice

  • 16 oz Orange juice cold

Instructions

  • Prepare the ingredients as instructed above.
  • Toast the bread: Toast all slices of bread until golden and crisp.
  • Assemble the cottage cheese toast with tomato and onion: Spread cottage cheese on two slices of toast. Top with tomato and red onion. Drizzle with olive oil and season with salt, black pepper, and oregano.
  • Assemble the cottage cheese toast with lox: Spread cottage cheese on the remaining two slices. Top with chopped lox and red onion. Garnish with dill and season with salt and black pepper.
  • Serve the toast with mixed fruit and orange juice.
