Cottage Cheese Toast with Tomato and Onion
- 2 slices Your choice of bread
- ½ cup Cottage cheese
- 2 TBSP Red onion chopped
- 1 Tomato small diced
- ½ tsp Extra-virgin olive oil
- ¼ tsp Dried oregano
Cottage Cheese Toast with Lox
- 2 slices Your choice of bread
- ½ cup Cottage cheese
- 2 oz Lox (smoked salmon) chopped
- 2 TBSP Red onion chopped
- 1 tsp Fresh dill roughly chopped
Seasoning
- Salt to taste
- Black pepper to taste
Fruit
- 2 cups Mixed fruit (e.g. apple slices, grapes, kiwi), washed and prepared as needed
Orange Juice
- 16 oz Orange juice cold
Instructions
- Prepare the ingredients as instructed above.
- Toast the bread: Toast all slices of bread until golden and crisp.
- Assemble the cottage cheese toast with tomato and onion: Spread cottage cheese on two slices of toast. Top with tomato and red onion. Drizzle with olive oil and season with salt, black pepper, and oregano.
- Assemble the cottage cheese toast with lox: Spread cottage cheese on the remaining two slices. Top with chopped lox and red onion. Garnish with dill and season with salt and black pepper.
- Serve the toast with mixed fruit and orange juice.
