Corned Beef Hash and Eggs

Ingredients

Corned Beef Hash

  • 8 oz Corned beef hash

Toast with Jam

  • 2 slices Your choice of bread
  • 2 TBSP Your choice of jam or preserves

Eggs

  • 1 TBSP Butter
  • 4 Eggs
  • Salt to taste
  • Black pepper to taste

Orange juice

  • 16 oz Orange juice cold

Instructions

  • Heat a non-stick skillet over medium heat.
  • Open the can of corned beef hash and empty it into the skillet.
  • Spread the hash evenly in the skillet and let it cook without stirring for about 5-7 minutes or until the bottom is nicely browned. Using a spatula, flip the hash over to brown the other side. Cook for another 5-7 minutes until both sides are evenly browned and crispy.
  • While the hash is cooking, toast the bread slices in a toaster until golden brown. Spread jam on the toasted slices according to your preference.
  • Heat a skillet over medium heat. Melt the butter in the skillet and add the eggs. Cook to your preference (sunny side up, over easy, scrambled etc). Season with salt and pepper to taste.
  • Serve the eggs with corn beef hash, toast, and orange juice.
