Ingredients
Cinnamon Swirl Chocolate Chip Muffins
- 1/2 cup All-purpose flour
- 1/4 cup Sugar
- ½ tsp Baking powder
- ¼ tsp Baking soda
- ¼ tsp Salt
- ¼ tsp Ground cinnamon
- 1/4 cup Milk
- 2 TBSP Unsalted butter melted
- 1 large Egg
- ½ tsp Vanilla extract
- ¼ cup Mini chocolate chips
Cinnamon Swirl
- 1 TBSP Brown sugar
- ½ tsp Ground cinnamon
Soft Boiled Eggs
- 2 Eggs
Orange Juice
- 16 oz Orange juice
Instructions
- Preheat the Oven: Preheat the oven to 375°F (190°C). Grease or line a muffin tin with paper liners for 2 muffins (or use two small ramekins).
- Make the Cinnamon Swirl: In a small bowl, combine the brown sugar and cinnamon. Set aside.
- Prepare the Muffin Batter: In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and ground cinnamon. In another bowl, mix the milk, melted butter, egg, and vanilla extract until smooth. Gradually combine the wet and dry ingredients, stirring until just incorporated. Gently fold in the mini chocolate chips.
- Assemble the Muffins: Spoon half of the muffin batter into the prepared muffin tin or ramekins. Sprinkle about ½ teaspoon of the cinnamon swirl mixture over the batter. Add the remaining batter on top, filling the muffin tin about ⅔ full. Sprinkle another ½ teaspoon of the cinnamon swirl mixture on top.
- Bake the Muffins: Place the muffins in the oven and bake for 15-18 minutes, or until a toothpick inserted into the center comes out clean. Set aside to cool.
- Prepare the Soft-Boiled Eggs: While the muffins bake, bring a small pot of water to a boil. Gently lower the eggs into the water using a spoon. Reduce the heat to a simmer and cook for 5-6 minutes for runny yolks. Remove the eggs with a slotted spoon and transfer them to a bowl of cold water to stop the cooking process. Carefully peel once cool enough to handle.
- Serve: the muffins with eggs and orange juice.
