Ingredients

Bagel

  • 1 Your choice of bagel sliced in half
  • 4 TBSP Vegetable cream cheese

Chili Oil Scrambled Eggs

  • 1 TBSP Butter
  • 4 Eggs beaten
  • Salt to taste
  • Black pepper to taste
  • 1 TBSP Chinese chili oil
  • 1 tsp Red pepper flakes

Fruit

  • 1 cup Fresh fruit such as orange slices, berries, or banana, washed and prepared as needed

Orange Juice

  • 16 oz Orange juice cold

Instructions

  • Prepare the bagel: Slice the bagel in half and toast until golden brown. Once toasted, spread vegetable cream cheese on each half.
  • Heat the pan: In a nonstick skillet over medium-low heat, melt the butter. Add half of the chili oil and red pepper flakes.
  • Scramble the eggs: While the pan heats, beat the eggs in a bowl with salt and black pepper. Pour into the skillet and cook gently, stirring with a spatula, until just set, about 2–3 minutes. Remove from heat.
  • Finish the eggs: Drizzle the remaining chili oil over the scrambled eggs.
  • Serve the eggs alongside the bagel halves with fresh fruit and orange juice.
