Ingredients
Chow Mein
- 4 oz Asian noodles
- 2 TBSP Reduced-sodium soy sauce
- 1 TBSP Oyster sauce
- ½ tsp Sesame oil
- ¼ tsp Sugar
- ¼ tsp Black pepper
- 2 TBSP Vegetable oil
- 8 oz Chicken breast boneless skinless thinly sliced
- ½ Onion thinly sliced
- ½ Bell pepper thinly sliced
- 1 cup Carrot julienned
- 1 cup Shredded cabbage mix
- 2 cloves Garlic minced
- 2 Scallions sliced (for garnish)
Steamed Broccolini
- 1 bunch Broccolini
- Water for steaming
- Salt to taste
- Black pepper to taste
Coconut Lime Water
- 24 oz Coconut water
- 2 wedge Lime
Fortune Cookie
- 2 Fortune cookies
Instructions
- Cook the noodles: In a pot of salted boiling water, cook the Asian noodles according to package directions. Drain well and set aside.
- Make the sauce: In a small bowl, combine soy sauce, oyster sauce, sesame oil, sugar, and black pepper. Set aside.
- Stir-fry the chicken: Heat half of the vegetable oil in a wok or large skillet over high heat. Add the chicken and stir-fry until lightly browned.
- Cook the vegetables: Add the remaining vegetable oil, then the onion, bell pepper, carrots, cabbage, and garlic. Stir-fry for 2–3 minutes until crisp-tender.
- Add the sauce and noodles: Pour the sauce over the chicken and vegetables. Stir-fry for 1 minute. Add the cooked noodles and toss well to combine. Remove from heat and garnish with scallions. Cook chicken to an internal temperature of 165°F (74°C).
- Steam the broccolini: Bring a pot of water to a boil. Steam the broccolini over boiling water for 3–4 minutes or until tender-crisp. Season with salt and pepper.
- Prepare the drink: Mix the coconut water with lime wedges.
- Serve: Plate the chow mein with steamed broccolini on the side. Serve with coconut lime water and a fortune cookie.
