Ingredients

Chow Mein

  • 4 oz Asian noodles
  • 2 TBSP Reduced-sodium soy sauce
  • 1 TBSP Oyster sauce
  • ½ tsp Sesame oil
  • ¼ tsp Sugar
  • ¼ tsp Black pepper
  • 2 TBSP Vegetable oil
  • 8 oz Chicken breast boneless skinless thinly sliced
  • ½ Onion thinly sliced
  • ½ Bell pepper thinly sliced
  • 1 cup Carrot julienned
  • 1 cup Shredded cabbage mix
  • 2 cloves Garlic minced
  • 2 Scallions sliced (for garnish)

Steamed Broccolini

  • 1 bunch Broccolini
  • Water for steaming
  • Salt to taste
  • Black pepper to taste

Coconut Lime Water

  • 24 oz Coconut water
  • 2 wedge Lime

Fortune Cookie

  • 2 Fortune cookies

Instructions

  • Cook the noodles: In a pot of salted boiling water, cook the Asian noodles according to package directions. Drain well and set aside.
  • Make the sauce: In a small bowl, combine soy sauce, oyster sauce, sesame oil, sugar, and black pepper. Set aside.
  • Stir-fry the chicken: Heat half of the vegetable oil in a wok or large skillet over high heat. Add the chicken and stir-fry until lightly browned.
  • Cook the vegetables: Add the remaining vegetable oil, then the onion, bell pepper, carrots, cabbage, and garlic. Stir-fry for 2–3 minutes until crisp-tender.
  • Add the sauce and noodles: Pour the sauce over the chicken and vegetables. Stir-fry for 1 minute. Add the cooked noodles and toss well to combine. Remove from heat and garnish with scallions. Cook chicken to an internal temperature of 165°F (74°C).
  • Steam the broccolini: Bring a pot of water to a boil. Steam the broccolini over boiling water for 3–4 minutes or until tender-crisp. Season with salt and pepper.
  • Prepare the drink: Mix the coconut water with lime wedges.
  • Serve: Plate the chow mein with steamed broccolini on the side. Serve with coconut lime water and a fortune cookie.
