Ingredients
Home Fries
- 2 cups Potatoes diced
- 2 TBSP Extra-virgin olive oil
- ¼ tsp Garlic powder
- ¼ tsp Paprika
- Salt
- Black pepper
Eggs
- 2 tsp Butter or oil (for cooking)
- 4 Eggs
- Salt
- Black Pepper
- 2 Whole wheat tortilla
- 1 cup Alfalfa sprouts
Avocado
- 1 Avocado sliced
- Salt
- Black pepper
- Lime juice
Fruit
- 2 cups Mixed fruit i.e. Grapes melon pineapple prepared accordingly
Orange Juice
- 16 oz Orange juice cold
Instructions
- Preheat the oven to 400F (204C).
- Prepare ingredients per the instructions above.
- Toss the potatoes with oil, garlic powder, paprika, salt and pepper. Cook on a baking sheet in the oven tossing about halfway through until tender and nicely browned and tender.
- Add butter or cooking oil to a nonstick pan over medium heat. Add the eggs to the pan. Cook until the whites are firm. Then remove from the heat. Season with salt and pepper.
- Season the avocado with salt, pepper and lime juice.
- Place the eggs, home fries, sprouts, avocado in a wrap. Fold in the ends and roll up. Cut in half.
- Serve the wrap with fruit and orange juice.
