Ingredients

Mexican Street Tacos (Beef Soft Shell):

  • 8 oz Ground beef
  • 1 tsp Chili powder
  • 1/2 tsp Ground cumin
  • 1/2 tsp Garlic powder
  • Salt to taste
  • Black pepper to taste
  • 1/4 cup Onion diced
  • 1/4 cup Tomatoes diced
  • 1 TBSP Vegetable oil
  • 6 small Flour tortillas
  • 1/4 cup Fresh cilantro chopped
  • 1/4 cup Monterey Jack cheese shredded

Chips and Guac

  • 2 Avocados ripe
  • 1/4 cup Tomatoes diced
  • 2 tsp Fresh cilantro chopped
  • 1 TBSP Lime juice
  • 1/4 tsp Garlic powder
  • Salt to taste
  • Black pepper to taste
  • 2 oz Tortilla chips

Margarita Mocktail

  • 1 TBSP Honey or sugar
  • 12 oz Water
  • 4 oz Orange juice
  • ½ cup Lime juice as needed to taste
  • 2 wedges Lime for garnish optional

Instructions

  • Cook the Beef: In a skillet over medium heat, Add the ground beer and season with chili powder, ground cumin, garlic powder, salt and pepper. Cook breaking it up into smaller pieces until nicely browned. Remove from the heat and set it aside.
  • Make the Guacamole: In the bowl with mashed avocado, add diced tomatoes, chopped cilantro, lime juice, garlic powder, salt, and pepper. Mix well until all ingredients are combined and the guacamole reaches your desired consistency.
  • Warm the soft tortillas in a skillet for about 20 - 30 seconds on each side until they become pliable and slightly toasted.
  • Assemble the Tacos: Divide the cooked beef among the warm tortillas. Top each taco with chopped fresh cilantro, diced onion, diced tomatoes, and shredded Monterey Jack cheese.
  • Make the Mocktail: Place all margarita mocktail ingredients into a pitcher or drink shaker. Mix until the honey is dissolved. Adjust any of the ingredients as needed to taste.
  • Serve the tacos with chips and guacamole, and marg mocktail.
