Ingredients
Chips and Guacamole
- 1 Avocado cut in half
- 2 tsp Fresh cilantro chopped
- 1 TBSP Lime juice
- 1/4 tsp Garlic powder
- Salt to taste
- Black pepper to taste
- 2 oz Tortilla chips
Beef and Black Beans Street Tacos
- 1 tsp Extra-virgin olive oil
- 8 oz Ground beef
- 1/2 tsp Ground cumin
- 1/4 tsp Smoked paprika
- 1/4 tsp Chili powder
- Salt to taste
- Black pepper to taste
- 1/2 cup Black beans rinsed and drained
- 4 Flour tortillas
- 1/4 cup Mexican cheese blend
- 1 cup Romaine lettuce shredded
- ½ cup Tomatoes diced
- 2 TBSP Sour cream or Mexican crema (optional)
Limeade
- 24 oz Limeade cold
Instructions
- Prepare the Guacamole: Scoop out the flesh of the avocado and mash it in a bowl with a fork. Add chopped cilantro, lime juice, garlic powder, salt, and pepper. Mix well until all ingredients are combined and the guacamole reaches your desired consistency. Refrigerate until ready to serve.
- Cook the Beef and Black Beans: Heat oil in a skillet over medium heat. Add the ground beef, cumin, smoked paprika, chili powder, salt, and pepper to the skillet, breaking it apart with a spatula, and cook until nicely browned, about 5-6 minutes. Add the black beans and cook for another 2-3 minutes, stirring occasionally until heated through.
- Warm the Tortillas: While the beef mixture finishes cooking, warm the tortillas in a dry skillet over medium heat for 30 seconds per side or wrap them in a damp paper towel and microwave for 20-30 seconds.
- Assemble the Tacos: Spoon the beef and black bean mixture evenly into the tortillas. Top with shredded cheese, lettuce, tomato, and a dollop of sour cream or crema.
- Serve: Serve the beef and black bean tacos with chips and guacamole and limeade.
