Ingredients
Ribs:
- ½ TBSP Brown sugar
- 1 tsp Paprika
- ½ tsp Garlic powder
- ½ tsp Onion powder
- ½ tsp Salt
- ¼ tsp Black pepper
- 1 rack Pork baby back ribs (a rib rack is about 2 lbs on average)
- 2 cups BBQ sauce
Grilled Corn:
- 2 ears Corn on the cob shucked
- 2 tsp Butter
Watermelon:
- 2 slices Watermelon
Salad:
- 2 cups Mesclun mix
- 6 Grape tomatoes halved
- ¼ cup Cucumber sliced
- ¼ cup Carrots peeled and shaved
- 2 tsp Thousand Island dressing
Lemon Sparkling Water:
- 4 slices Lemon
- 24 oz Sparkling water
Instructions
- Prepare all ingredients as described above.
- In a small bowl, mix brown sugar, paprika, garlic powder, onion powder, salt, and black pepper to make the dry rub.
- Rub the seasoning mixture evenly over the ribs.
- Preheat the oven to 350°F (176°C). Wrap the ribs in foil and place on a baking sheet. Cook in the oven for 3 to 4 hours until very tender.
- Preheat a grill or grill pan on medium heat.
- Grill the corn on all sides until tender and nicely charred. Brush with butter and season with salt and pepper to taste.
- Remove the ribs from the foil and brush with BBQ sauce. Grill on both sides until nicely charred, about 3–5 minutes per side. Slice in between the rib joints to portion.
- Portion the mesclun mix, then top with tomatoes, cucumber, and shaved carrot. Dress with a thousand island dressing.
- Add the lemon to the sparkling water.
- Serve the ribs with corn, watermelon, salad, and sparkling water.
