Ingredients

Avocado Toast

  • 1 Tomato diced
  • 2 TBSP Red onion finely diced
  • 1 tsp Jalapeño peppers finely chopped (optional)
  • 1 TBSP Fresh cilantro chopped
  • 1 TBSP Lime juice
  • 1 tsp Extra-virgin olive oil
  • pinch Salt
  • 2 slices Your choice of bread
  • 1 Avocado ripe mashed
  • Salt to taste

Eggs

  • 2 tsp Butter
  • 4 Eggs
  • Salt to taste
  • Black pepper to taste

Fruit

  • 2 cups Fresh fruit e.g., strawberries, melon chunks, or grapes, washed and prepared as needed

Orange Juice

  • 16 oz Orange juice cold

Instructions

  • Prepare all ingredients as described above.
  • Make the pico de gallo: In a bowl, combine tomato, red onion, jalapeño (if using), cilantro, lime juice, olive oil, and a pinch of salt. Mix and set aside.
  • Toast the bread slices to your preference.
  • In a non-stick skillet, melt butter over medium heat. Crack in the eggs, season with salt and black pepper, and cook sunny-side up or to desired doneness, about 2–3 minutes.
  • Spread mashed avocado on each toast slice. Salt and pepper to taste. Top with pico de gallo.
  • Serve avocado toast with eggs, fresh fruit, and cold orange juice.
