Ingredients
Avocado Toast
- 1 Tomato diced
- 2 TBSP Red onion finely diced
- 1 tsp Jalapeño peppers finely chopped (optional)
- 1 TBSP Fresh cilantro chopped
- 1 TBSP Lime juice
- 1 tsp Extra-virgin olive oil
- pinch Salt
- 2 slices Your choice of bread
- 1 Avocado ripe mashed
- Salt to taste
Eggs
- 2 tsp Butter
- 4 Eggs
- Salt to taste
- Black pepper to taste
Fruit
- 2 cups Fresh fruit e.g., strawberries, melon chunks, or grapes, washed and prepared as needed
Orange Juice
- 16 oz Orange juice cold
Instructions
- Prepare all ingredients as described above.
- Make the pico de gallo: In a bowl, combine tomato, red onion, jalapeño (if using), cilantro, lime juice, olive oil, and a pinch of salt. Mix and set aside.
- Toast the bread slices to your preference.
- In a non-stick skillet, melt butter over medium heat. Crack in the eggs, season with salt and black pepper, and cook sunny-side up or to desired doneness, about 2–3 minutes.
- Spread mashed avocado on each toast slice. Salt and pepper to taste. Top with pico de gallo.
- Serve avocado toast with eggs, fresh fruit, and cold orange juice.
