Ingredients

Avocado Toast with Eggs and Red Pepper Flakes

  • 2 slices Your choice of bread such as sourdough or multigrain
  • 1 Avocado ripe
  • Salt to taste
  • Black pepper to taste
  • ½ Lemon juiced optional
  • 2 tsp Butter
  • 4 Eggs
  • Red pepper flakes to taste

Fruit

  • 1 cup Fresh fruit such as berries sliced apple or orange segments, washed and prepared as needed

Orange Juice

  • 16 oz Orange juice cold

Instructions

  • Toast the Bread: Begin by toasting the bread to your desired level of crispiness.
  • Mash the Avocado: While the bread is toasting, scoop the avocado flesh into a bowl. Add salt, black pepper, and optional lemon juice. Mash until mostly smooth.
  • Cook the Eggs: Heat a nonstick skillet over medium heat. Add butter. Crack the eggs into the pan, season with salt and black pepper, and cook to your preference—sunny-side up, over-easy, or poached—about 3–5 minutes.
  • Assemble the Toast: Spread mashed avocado evenly over the toasted bread slices. Top with eggs and red pepper flakes.
  • Serve the avocado toast with fruit and orange juice. Enjoy!
