Avocado Toast with Eggs and Red Pepper Flakes
- 2 slices Your choice of bread such as sourdough or multigrain
- 1 Avocado ripe
- Salt to taste
- Black pepper to taste
- ½ Lemon juiced optional
- 2 tsp Butter
- 4 Eggs
- Red pepper flakes to taste
Fruit
- 1 cup Fresh fruit such as berries sliced apple or orange segments, washed and prepared as needed
Orange Juice
- 16 oz Orange juice cold
Instructions
- Toast the Bread: Begin by toasting the bread to your desired level of crispiness.
- Mash the Avocado: While the bread is toasting, scoop the avocado flesh into a bowl. Add salt, black pepper, and optional lemon juice. Mash until mostly smooth.
- Cook the Eggs: Heat a nonstick skillet over medium heat. Add butter. Crack the eggs into the pan, season with salt and black pepper, and cook to your preference—sunny-side up, over-easy, or poached—about 3–5 minutes.
- Assemble the Toast: Spread mashed avocado evenly over the toasted bread slices. Top with eggs and red pepper flakes.
- Serve the avocado toast with fruit and orange juice. Enjoy!
