Ingredients

Cucumber Water

  • 24 oz Water
  • 8 Slices Cucumber
  • Ice cubes

Arayes

  • ¼ cup Onion finely grated
  • 1 clove Garlic minced
  • 8 oz Ground beef
  • 1/4 tsp Ground cinnamon
  • 1/4 tsp Ground allspice
  • 1/4 tsp Black pepper
  • 1/2 tsp Salt
  • 1 TBSP Fresh parsley Chopped
  • 1 tsp Extra-virgin olive oil plus more for brushing
  • 1 Pita bread with pocket halved

Sauce

  • ½ cup Yogurt
  • 1 tsp Lemon Juice
  • 1 tsp Fresh dill

For Serving

  • 1 medium Apple cored and sliced

Instructions

  • Prep the ingredients as listed above.
  • For the cucumber water, place cucumber slices in a pitcher with water and let infuse in the refrigerator. Serve over ice if desired.
  • In a bowl, combine grated onion, minced garlic, ground beef, cinnamon, allspice, black pepper, salt, parsley, and olive oil. Mix well by hand or with a spoon until fully combined.
  • Carefully open each pita half to create a pocket without tearing. Stuff each pita half with the beef mixture, spreading it evenly inside and flattening slightly to ensure even cooking.
  • Lightly brush the outsides of the stuffed pita halves with olive oil.
  • Preheat a nonstick pan over medium heat.
  • Cook on both sides in the pan until the bread is crisp and the beef reaches an internal temperature of 160°F (71°C). Slice in half
  • Combine the ingredients for the sauce. Blend until smooth.
  • Serve the arayes with sauce, apple slices and cucumber water.
