  • 2 TBSP Walnuts or pecans, chopped, optional, for topping
  • Honey or additional sweetener, optional, for drizzling

Instructions

  • Brew the Coffee: Brew the coffee and refrigerate to cool.
  • For the Eggs: Place the eggs in a saucepan and cover with cold water. Bring to a boil over medium-high heat. Once boiling, cover and remove from heat. Let sit for 10-12 minutes.
  • Once the eggs are done, place them in an ice bath to cool.
  • Cook the Bacon: While the eggs are cooking, in a skillet over medium heat, cook the bacon until crispy. Remove and place on a paper towel to drain, then crumble into pieces.
  • For the Apple Oatmeal: Dice the apple and set aside. Gather all other ingredients for the oatmeal.
  • Cook the Oats: In a medium saucepan, bring water or milk to a boil. Add the rolled oats and a pinch of salt. Stir well and reduce the heat to medium.
  • Add the Apples and Cinnamon: Stir in the diced apple and ground cinnamon. Cook for about 5 - 7 minutes, stirring occasionally, until the oats are tender and the mixture is creamy.
  • Sweeten the Oatmeal: Once cooked, remove from heat and stir in the brown sugar or maple syrup. Adjust the sweetness to your preference.
  • Prepare the Deviled Egg Filling: While the oatmeal is cooking, carefully peel the eggs under cold running water. Slice each egg in half lengthwise, remove the yolks and place them in a mixing bowl.
  • Add the softened cream cheese, crumbled bacon (reserve some for topping), salt, and pepper to the yolks. Mash together until well combined and smooth.
  • Fill the Eggs: Spoon or pipe the yolk mixture back into the egg white halves. Sprinkle with reserved bacon, green onions, and everything bagel seasoning.
  • Pour the coffee over ice and prepare to your liking.
  • Serve: Divide the oatmeal into bowls. Top with walnuts or pecans if desired, and drizzle with honey or additional sweetener if you like. Serve the deviled eggs and iced coffee alongside.
