Ingredients
Honey Butter
- ¼ cup Butter softened at room temp
- 2 TBSP Honey
Apple Arugula and Brie Panini
- 4 slices Sourdough bread (or choice of bread)
- 4 oz Brie cheese rind removed and cut into thin slices
- 1 Granny Smith apple cored and sliced
- 1 cup Arugula
Hot Spiced Apple Cider
- 2 cups Apple cider
- 1 tsp Whole cloves
- 1 stick Cinnamon
- 1 Orange sliced
- 1 tsp Brown sugar optional
- ¼ tsp Ground nutmeg
- ¼ tsp Allspice
Cheese and Crackers
- 12 Crackers
- 12 slices Your favorite block cheese example: parmesan brie etc.
Instructions
- Make the honey butter by whisking the butter and honey until smooth. Set aside.
- Heat your panini press (or a grill pan or skillet).
- Spread the butter on one side of each slice of bread. Then, layer the brie on top of the butter followed by apple slices. Top one side of each sandwich with arugula.
- Fold the sandwiches together.
- Add sandwiches to panini maker and press for about 10 minutes or until the cheese is melted. If you don't have a panini press, you can make these sandwiches in a nonstick skillet or grill pan, much like you make grilled cheese sandwiches. Place another heavy pan on top of the sandwich while cooking if desired to get a panini press effect.
- In a small saucepan, combine the apple cider, whole cloves, cinnamon stick, orange slices, brown sugar (if using), ground nutmeg, and allspice. Heat the mixture over medium heat until it begins to simmer. Reduce the heat to low and let it simmer for about 10 - 15 minutes to allow the flavors to meld. Remove from heat and strain out the cloves and cinnamon stick. Serve hot in mugs, garnished with additional orange slices or a cinnamon stick if desired.
- Serve apple arugula brie panini with honey butter, cheese and crackers, and hot spiced apple cider.
