Ingredients
- 8 oz Cellophane noodles or your preference of noodle
- 1 lb Sirloin steaks
- 2 tbsp Extra-virgin olive oil
- 1 tbsp Sesame oil
- 1/2 Red onion sliced
- 4 oz Mushrooms sliced
- 1 Carrots peeled and shredded
- 2 cups Snow peas
- 2 cloves Garlic minced
- 2 tsp Fresh ginger minced
- 2 tbsp Lemongrass chopped
- 4 tbsp Reduced-sodium soy sauce
- 4 tbsp Fish sauce
- 2 tbsp Rice wine vinegar
- 4 wedges Lime
- 2 tbsp Fresh cilantro
Instructions
- Cook the noodles according to the directions on the package. Drain well.
- Preheat a grill or grill pan on medium heat. Season both sides of the steak with salt and pepper.
- Cook the steak to your desired temperature using a thermometer (see below). Once cooked set on a cutting board to rest for 5 minutes before slicing against the grain.
- In a nonstick pan on medium heat, heat both oils. Add in the onions and mushrooms. Saute for 4 - 5 minutes. Add in the carrots, snow peas, garlic, ginger, and lemongrass; saute for 2 - 3 minutes. Add the soy sauce, fish sauce, and rice wine vinegar; simmer for about 2 - 3 minutes. .
- Toss in the noodles, serve the sliced steak over top. Garnish with lime wedges and cilantro.

Steak Internal Temperatures:
- Rare: 115 - 120 degrees F
- Medium Rare: 125 - 130 degrees F
- Medium: 135 - 140 degrees F
- Medium Well: 145 - 150 degrees F
- Well Done: 160 degrees F
