Vietnamese Steak Noodles

Ingredients

  • 8 oz Cellophane noodles or your preference of noodle
  • 1 lb Sirloin steaks
  • 2 tbsp Extra-virgin olive oil
  • 1 tbsp Sesame oil
  • 1/2 Red onion sliced
  • 4 oz Mushrooms sliced
  • 1 Carrots peeled and shredded
  • 2 cups Snow peas
  • 2 cloves Garlic minced
  • 2 tsp Fresh ginger minced
  • 2 tbsp Lemongrass chopped
  • 4 tbsp Reduced-sodium soy sauce
  • 4 tbsp Fish sauce
  • 2 tbsp Rice wine vinegar
  • 4 wedges Lime
  • 2 tbsp Fresh cilantro

Instructions

  • Cook the noodles according to the directions on the package. Drain well.
  • Preheat a grill or grill pan on medium heat. Season both sides of the steak with salt and pepper.
  • Cook the steak to your desired temperature using a thermometer (see below). Once cooked set on a cutting board to rest for 5 minutes before slicing against the grain.
  • In a nonstick pan on medium heat, heat both oils. Add in the onions and mushrooms. Saute for 4 - 5 minutes. Add in the carrots, snow peas, garlic, ginger, and lemongrass; saute for 2 - 3 minutes. Add the soy sauce, fish sauce, and rice wine vinegar; simmer for about 2 - 3 minutes. .
  • Toss in the noodles, serve the sliced steak over top. Garnish with lime wedges and cilantro.

Notes

Steak Internal Temperatures:
  • Rare: 115 - 120 degrees F
  • Medium Rare: 125 - 130 degrees F
  • Medium: 135 - 140 degrees F
  • Medium Well: 145 - 150 degrees F
  • Well Done: 160 degrees F
