Ingredients
- 12 Whole wheat tortilla
- 3 lb Ground beef
- 16 oz Black beans rinsed and drained
- 2 tbsp Chili powder
- 2 tsp Ground cumin
- 2 tsp Garlic powder
- 1 tsp Dried oregano
- 2 tsp Paprika
- 8 oz Cheddar cheese shredded
Instructions
- If freezing the burritos, set out the tortilla wraps so they can come up to room temperature. Otherwise, warm the tortilla wraps in a 300°F oven.
- Heat a nonstick pan over medium heat; add the ground beef, black beans, chili powder, cumin, garlic powder, oregano, paprika, and season with salt and pepper. Cook until browned, about 4 to 6 minutes, break up the beef into smaller pieces using a spatula as it cooks; then drain the excess fat.
- Remove from heat and mix in the cheddar cheese. Adjust the seasonings to taste. (If freezing the burritos, allow the beef mixture to cool completely before assembling.)
- Place the beef mixture onto the tortilla, fold in the ends and roll up tightly. (If freezing, wrap each burrito individually in plastic wrap tightly, place them into zip lock bags, and into the freezer.)
- To reheat, remove the burrito from the plastic wrap and heat in the microwave for 90 second increments until heated through or in a 350°F oven for approximately 8 to 10 minutes or until heated through. Serve with a tbsp. of sour cream on the side if desired. (Can be kept in the freezer for 3 months if wrapped well.)
