Ingredients

  • 1/2 cup White rice rinsed
  • 1 cup Chicken broth
  • 1/4 Onion peeled and diced
  • 1/2 stalk Celery diced
  • 1/2 Carrots peeled and diced
  • 2 tbsp Extra-virgin olive oil

Instructions

  • Rinse the rice with cold water, drain well and add the rice to a saucepan with the broth, onion, celery, carrot, and season with salt & pepper with a lid on. Cook the rice according to the instructions on the package. Once the rice is cooked through drain any excess liquid if necessary. Adjust the seasoning with salt and pepper to taste.
  • Preheat the oven broiler on high.
  • Toss the rice with the oil and spread it out in a flat layer in a large oven safe nonstick pan. Place the pan under the broiler to form a crispy golden brown layer. Make sure to keep an eye on it so it does not burn. Remove from the oven and serve.
