Ingredients

Muesli with Yogurt

  • 1 cup Greek yogurt
  • 1/3 cup Granola
  • 2 TBSP Almonds toasted and coarsely chopped
  • 1 TBSP Sunflower seeds toasted
  • 2 TBSP Dried currants
  • 2 TBSP Dried apricots finely chopped

Garnish

  • 1 Apple sliced
  • 2 tsp Honey

Green Juice

  • 1 Pear cored and halved
  • 1 stalk Celery cut into several pieces
  • ½ Cucumber cut into several pieces
  • ¼ cup Fresh parsley packed (stems OK)
  • ½- inch piece Fresh ginger peeled
  • 1 Orange peeled
  • 2 cups Water as needed for blending

Instructions

  • Prepare all ingredients as listed.
  • (Optional) Toast the almonds and sunflower seeds in a dry skillet over medium heat for 2–3 minutes, stirring often. Let cool slightly.
  • In a mixing bowl, combine granola, chopped apricots, currants, almonds, and sunflower seeds.
  • Divide the yogurt between two bowls. Spoon the muesli mixture evenly over the top. Garnish with sliced apple and drizzle with honey.
  • For the juice, combine pear, celery, cucumber, parsley, ginger, orange, and water in a blender or juicer. Blend until smooth. Strain if you prefer a clearer juice.
  • Serve the muesli bowls with fresh green juice.
