Ingredients

Frontega Chicken Panini

  • 2 TBSP Mayonnaise
  • 1 Chipotle chile in adobo finely chopped
  • Salt to taste
  • Black pepper to taste
  • 2 pieces Focaccia bread halved horizontally
  • ¼ cup Fresh basil
  • 6 oz Rotisserie chicken
  • 2 slices Mozzarella cheese
  • 1 Tomato sliced
  • ½ Red onion thinly sliced
  • 2 Pickle spears

Carrots and Hummus

  • 1 cup Carrots peeled and cut into sticks
  • 1/3 cup Hummus

Lemon Sparkling + Chia Seeds

  • 24 oz Sparkling water cold
  • 1 Lemon sliced
  • 2 tsp Chia seeds

Instructions

  • Prepare all ingredients as listed.
  • In a bowl, mix the mayonnaise, chopped chipotle chile, salt, and black pepper until smooth.
  • Spread the chipotle mayonnaise over the cut sides of the focaccia bread.
  • Layer the basil, chicken, mozzarella, tomato, and red onion onto the bread. Season lightly with salt and black pepper, then close the sandwiches.
  • Heat a panini press or grill pan over medium heat. Cook the sandwiches until the bread is crisp and golden and the mozzarella is melted.
  • In a glass or pitcher, combine the sparkling water, lemon slices, and chia seeds. Stir well, let rest briefly, then stir again.
  • Serve the panini with carrots, hummus, pickle spears, and lemon chia sparkling water.
