Ingredients

Jambon Beurre

  • 1 1/2 TBSP Butter softened
  • 1 TBSP Fresh chives minced
  • 1 TBSP Fresh parsley minced
  • ½ tsp Dijon mustard
  • 1 clove Garlic grated
  • Salt to taste
  • Black pepper to taste
  • 1 cup Arugula
  • ½ TBSP Lemon juice
  • 1.5 oz Brie cheese sliced
  • 2 Whole wheat rolls
  • 6 oz Deli ham low sodium

Carrots and Hummus

  • 1 cup Carrots peeled and cut into sticks or baby carrots
  • 1/3 cup Hummus

Mandarins

  • 2 Mandarin oranges peeled and separated into segments

Lemon Sparkling Water + Chia Seeds

  • 24 oz Sparkling water cold
  • 1 Lemon sliced
  • 2 tsp Chia seeds

Instructions

  • Prepare all ingredients as listed. Remove the Brie from the refrigerator and allow it to sit briefly to soften slightly.
  • In a bowl, combine the butter, chives, parsley, Dijon mustard, and garlic. Mix until smooth and well combined. Season with salt and black pepper.
  • In a bowl, toss the arugula with lemon juice, salt, and black pepper until lightly coated.
  • Slice the rolls and spread the herb butter evenly inside. Layer with deli ham, Brie, and dressed arugula..
  • Combine the sparkling water, lemon slices, and chia seeds. Stir well and allow the chia seeds to hydrate briefly.
  • Serve the sandwich with carrots, hummus, mandarins, and lemon chia sparkling water.
