Ingredients

Mexican Beef Street Tacos

  • 1 tsp Extra-virgin olive oil
  • 4 Soft taco shells whole wheat
  • 8 oz Ground beef
  • 1 tsp Chili powder
  • 1/2 tsp Ground cumin
  • 1/2 tsp Garlic powder
  • Salt to taste
  • Black pepper to taste
  • 1/4 cup Onion diced
  • 1/4 cup Tomatoes diced
  • 1/4 cup Monterey Jack cheese shredded
  • 1/4 cup Romaine lettuce chopped

Chips and Guac

  • 1 Avocado
  • 2 tsp Fresh cilantro chopped
  • 1 TBSP Lime juice
  • 1/4 tsp Garlic powder
  • Salt to taste
  • Black pepper to taste
  • 2 oz Tortilla chips

Sparkling Chia Fresca

  • 1/2 cup Lemon juice
  • 1 TBSP Maple syrup
  • 1/2 tsp Chia seeds
  • 16 oz Sparkling water
  • 2 sprigs Fresh mint

Instructions

  • Prep all ingredients according to the ingredient list.
  • Season the ground beef with chili powder, ground cumin, garlic powder, salt, and black pepper.
  • Heat oil in a skillet over medium heat. Saute the ground beef, breaking it into small pieces, until fully browned. Remove from heat.
  • Warm the soft taco shells in a pan over medium heat until pliable on both sides.
  • Fill each taco shell with beef. Top with diced onion, diced tomatoes, shredded Monterey Jack cheese, and lettuce.
  • To make the guacamole, mash the avocados in a bowl until smooth. Add chopped cilantro, lime juice, garlic powder, salt, and black pepper. Stir until well combined.
  • For the chia fresca, combine combine all the ingredients. Let sit 5 minutes until the chia seeds bloom and slightly thicken.
  • Serve the tacos with tortilla chips and guacamole alongside sparkling chia fresca.
