Mediterranean Tuna Wrap
- 8 oz Canned albacore tuna packed in water and drained
- 2 TBSP Extra-virgin olive oil
- 2 TBSP Lemon juice
- Salt
- Black pepper
- 1/4 cup Red onion finely chopped
- 1/4 cup Cucumber chopped
- 1/4 cup Tomato chopped
- 2 TBSP Kalamata olives chopped
- 1 TBSP Fresh parsley chopped (optional)
- 2 large Whole wheat tortillas
- 1 cup Baby spinach
Sides
- 1 Apple sliced
- 2 oz Your choice of cheese (such as cheddar or brie)
- 2 Pickle spears
Hot Chamomile Tea
- 2 Chamomile tea bags or 1 tsp loose-leaf chamomile tea per bag
- 2 cups Water
Instructions
- Prepare the ingredients as listed.
- Place the tuna in a medium bowl and gently flake with a fork. Add the olive oil, lemon juice, salt, and black pepper, and mix until evenly combined.
- Stir in the red onion, cucumber, tomato, kalamata olives, and parsley until well distributed.
- Layer the tortilla wraps with baby spinach and tuna mixture, fold in the sides and roll tightly.
- Heat water until hot, then steep the chamomile tea bags in the hot water until fragrant and infused.
- Serve the wraps alongside the apple slices, cheese, pickle spears, and hot chamomile tea.
