Ingredients

Marinade & Seasoning

  • 3/4 tsp Garlic powder
  • 3/4 tsp Dried oregano
  • 1 TBSP Lemon juice
  • 3 TBSP Extra-virgin olive oil
  • Salt to taste
  • Black pepper to taste

Sandwich

  • 8 oz Chicken breast boneless skinless butterflied
  • 2 Brioche buns
  • 2 TBSP Mayonnaise
  • 2 cups Butter lettuce
  • 4 slices Tomato
  • 2 slices Swiss cheese
  • 1/4 cup Red onion thinly sliced

Carrots and Hummus

  • 1 cup Carrots peeled and cut into sticks or baby carrots
  • 1/2 cup Hummus

Blueberries

  • 1 cup Fresh blueberries

Lemon Chia Sparkling Water

  • 24 oz Sparkling water cold
  • 1 Lemon sliced
  • 2 tsp Chia seeds

Instructions

  • Prepare all ingredients as listed.
  • In a bowl, whisk together the garlic powder, dried oregano, lemon juice, and olive oil. Season with salt and black pepper.
  • Add the chicken breast to the marinade and coat evenly on all sides.
  • Preheat a grill or griddle pan over medium heat.
  • Grill the chicken until fully cooked, reaching an internal temperature of 165°F (74°C). Remove from heat and allow to rest briefly.
  • Lightly grill or toast the brioche buns until golden.
  • Spread mayonnaise on the inside of each bun. Layer with butter lettuce, tomato, grilled chicken, Swiss cheese, and red onion.
  • Combine the sparkling water, lemon slices, and chia seeds. Stir thoroughly, let rest briefly, then stir again to prevent clumping.
  • Serve the Greek grilled chicken sandwich with carrots and hummus, blueberries, and the lemon chia sparkling water. Enjoy!
