Ingredients
For the Tuna Filling
- 8 oz Canned albacore tuna packed in water drained
- 2 TBSP Extra-virgin olive oil
- 2 TBSP Lemon juice
- Salt
- Black pepper
- 1/4 cup Red onion finely chopped
- 1/4 cup Cucumber chopped
- 1/4 cup Tomato chopped
- 2 TBSP Kalamata olives chopped
- 1 TBSP Fresh parsley chopped (optional)
For Assembly
- 2 large Whole wheat tortilla
- 1 cup Baby spinach or mixed greens
Sides
- 1 Apple sliced
- 2 oz Your choice of cheese (such as cheddar or brie)
- 2 Pickle spears
Lemon Sparkling Water
- 24 oz Sparkling water
- 1 Lemon sliced
- Ice cubes for serving
Instructions
- Place the tuna in a medium bowl and flake it gently with a fork. Add the olive oil, lemon juice, salt, and black pepper to the tuna and mix until well combined.
- Stir in the red onion, cucumber, tomato, olives, and parsley until combined.
- Portion the spinach onto the tortilla. Top with tuna mixture, fold in the sides and roll up tightly. Cut in half.
- Combine sparkling water and lemon slices. Serve over ice if preferred. .
- Serve the wrap with apple slices, cheese, pickle spears, and lemon sparkling water.
